Every morning begins at the market and on the phone with our farmers. What arrives in the kitchen dictates the menu of the day: wild fish from the northern seas, root vegetables drawn from beneath the snow, honey from wild bees, and herbs gathered by hand. Nothing superfluous on the plate. Nothing left to chance in the room.

Anna spent eight years in the kitchens of Copenhagen and San Sebastián before returning home to open Solveig. Her philosophy is simple and uncompromising: the least intervention, the greatest honesty. Every dish passes through dozens of iterations before it earns its place on the menu.
